Glamorous Girl

Easter Fun

Easter was a blast this year! Cohen is finally old enough to enjoy all of the holiday festivities and it made Easter really fun this year. Here are a few highlights…

Easter Cupcakes

I tried a chocolate and coconut cupcake for gourmet club, they were pretty good, but not my favorite. I put a fluffy white frosting on, topped with coconut and jelly bellys. I will use the frosting again.

It is really pretty, sets up nice and has a marshmallow taste to it but it’s not sticky like marshmallow. It’s really shiny and easy to work with. It make A LOT too so, double your batch of cupcakes if you make it. I covered 48 cupcakes with it and only used half!



Fluffy White Frosting

3 large egg whites
1 1/2 c. granulated sugar
1/3 c. water
1/2 tsp cream of tartar
Pinch of salt
1 tsp. vanilla extract

1. Fill a skillet with 1 inch of water and bring to a simmer over medium-high heat. Reduce the heat so that the water is at a bare simmer.

2. In a bowl of an electric mixer, combine the egg whites, sugar, water, cream of tartar, and salt and, using the whisk attachment, beat at medium speed until foamy, about 1 minute.

3. Place the bowl in the skillet of simmering water and stire the mixture with a rubber spatula until it reaches 160 F. on an instant-read thermometer. Remove the bowl from the water and place it on the mixer stand. Using the shisk attachment, beat the mixture at high speed until it forms stiff peaks and is cool, 5-7 minutes. Add the vanilla extract and mix at medium spped until blended. Use right away, as the frosting hardens upon standing.

Lily Lou Lou

We bought Cohen a baby bunny for Easter this year and gave it to him early. She is so very cute, we love her little bunny ways.

Cohen LOVES her. He’s getting better and petting her softly rather than pinching her! He is always excited to see her and watch her hop around. It’s pretty cute.
